TUNA ON TOAST

This is one of those great "go to" dinners. It is done in a matter of minutes and tastes great. I like this on the days that we don't feel like cooking. Kids adore this and there are a million ways to spice it up. Play with the spices and see what your family likes!


TUNA ON TOAST

In a medium sauce pan make a basic white sauce... Melt down 2 TBSP butter with 2TBSP EVOO. Whisk in 2 TBSP flour and allow to cook a couple minutes. Whisk in 1 c. milk and 1 c. water. Season with salt, pepper, parsley, and nutmeg. Splash with white wine (optional), and add a handfull grated parmesan cheese. Allow to thicken. Stir in 1 can drained tuna and frozen peas.

Serve over toast.

*Try Herb de Provance in this for an extra flavor. The lavander taste is fantastic, but only a pinch as the seasoning is very strong.

**Also try drained chicken bits rather than tuna.

***Great over noodles too!
